For just prior to Episode I, there's the Darth Maul: Saboteur (e-book) by James Luceno, and Darth Maul: Shadow Hunter (printed book) by Michael Reaves. There's also Cloak of Deception (printed book) by James Luceno. These give some backstory and details about events that led up to Episode I, as well as events that have some bearing on stories that take place later in the timeline. As for after Return of the Jedi, there's The Truce at Bakura (printed book) by Kathy Tyers and of course the Thrawn trilogy (Heir to the Empire, Dark Force Rising, The Last Command [printed books]) by Timothy Zahn.

The links below contain a list of the Star Wars books and comics and places them within the timeline of the six films.
